This is a special one guys! SPON is taking over at The Whale and we are psyched about it. We’ll be pouring a variety of SPON brews, Jester King’s notable spontaneously fermented ale and can’t wait for you to try them all.

About Jester King:

Jester King is a brewery, restaurant, farm & event hall on a beautiful 165-acre ranch in the Texas Hill Country. They make food & drink uniquely tied to a time, place & people. The brewery is a welcoming place for people of all ages to enjoy community, fun, and hospitality in a special setting.

Jester King began as a farmhouse brewery committed to mixed culture and spontaneous fermentation. The beers incorporate well water, local grains, fruits and vegetables, foraged plants, and native yeast and bacteria so as to make beer uniquely tied to a time, place, and people. Their inspiration comes from the classic farmhouse breweries of Europe that embrace principles of subtlety, restraint, patience, full attenuation, and interesting fermentation character.

In January 2020, they began creating and offering some of their favorite “clean” beer styles, while staying true to their principles. Jester King utilizes Texas-grown grains and Texas malts whenever we can.

What is Spontaneous Fermentation?

It’s an old-school style of brewing.

Basically, spontaneously fermented beers rely on natural microflora from the air to ferment. Instead of cultivated yeast.

Whereas traditionally fermented beers have predictable traits from specific yeast strains, spontaneously fermented beers take on the characteristics of their surroundings.

So, this makes them wildly unpredictable. In other words letting go of that traditional control creates “wild ales”.

“In folklore, it’s said that Belgian farmhands would choose where to work based on the beer that was brewed. The flavor profiles were largely dependent on the microbiology of the land around them.”
